Embark on a culinary discovery of Bali, where the wild and inventive gourmet imaginings of French-American chef-visionary Chris Salans have taken root. Using essentially modern French techniques of cooking and presentation, the classically-trained Salans incorporates everyday Indonesian and Balinese ingredients and flavours – sometimes explosive, but more often subtly nuanced – into his recipes. This mosaic of dishes excites with their unusual taste profiles, but at the same time, appeals to Western palates. Salans calls his perfect balance of Indonesian flavours and Western technique – borne out of years of research, and trial and error – French-Balinese gastronomy. Gourmets who have successfully snagged a table at Salans’s frequently booked-out Mozaic Restaurant know that dining there is a sublime experience to be leisurely savoured over a six-course tasting menu. This ingredient-driven cookbook will be the perfect memento for diners who want to replicate the Mozaic culinary experience at home.

Chris Salans

Born in Washington, D.C. to a French mother and American father, Chris Salans moved to Paris at the age of two. Exposed to fine French food at a young age, Salans developed a passion for cooking and, not unexpectedly, joined Le Cordon Bleu cookery school in Paris after graduating from Tufts University in Boston, USA. He cut his teeth at Michelin-starred restaurants L’ Oustau de Baumaniere and Lucas Carton in France before returning to the US, where he worked for celebrity chefs Daniel Bouley and Thomas Keller. In 1995, Salans moved to Bali, where he later married an Indonesian girl and worked at a hotel and restaurant before starting Mozaic in 2001. Mozaic’s meteoric rise in the global restaurant scene has assured Chris’s position as one of the top chefs in Asia today.
