Chris Salans

Born in Washington, D.C. to a French mother and American father, Chris Salans moved to Paris at the age of two. Exposed to fine French food at a young age, Salans developed a passion for cooking and, not unexpectedly, joined Le Cordon Bleu cookery school in Paris after graduating from Tufts University in Boston, USA. He cut his teeth at Michelin-starred restaurants L’ Oustau de Baumaniere and Lucas Carton in France before returning to the US, where he worked for celebrity chefs Daniel Bouley and Thomas Keller. In 1995, Salans moved to Bali, where he later married an Indonesian girl and worked at a hotel and restaurant before starting Mozaic in 2001. Mozaic’s meteoric rise in the global restaurant scene has assured Chris’s position as one of the top chefs in Asia today.

AUTHOR

Diana Darling is an American artist and writer who has lived in Bali since 1980. She is the author of The Painted Alphabet, a novel based on a Balinese tale, and has contributed to numerous books and periodicals on Balinese and Indonesian culture.  She is currently a columnist for CNET (Asia) reporting on the use of the Internet in Indonesia. She is married to A. A. Alit Ardi of Ubud.

Philippe Heurtault was born in France in 1952, and first discovered the mysteries of the darkroom at age 16. His passion for photography led him to work with fashion legends such as Karl Lagerfeld and Yves Saint-Laurent in the 1970s. Known for his work in magazines such as Vogue, Playboy and Vanity Fair, Heartault has also worked for advertising agencies such as Publicis and McCann Erikson. He divides his time between France and Southeast Asia.
